Meh

Dinner tonight was just meh. Salad was good, but it's difficult to mess that up lol.
I made stuffed peppers for the first time. Got the expensive orange colored bell pepper. No idea why lol.
I didn't season the beef correctly or something so it was a bit bland. Oh well.
They can't all be homeruns :D

I got a few of the items I ordered. The coconut crystals and coconut nectar. No idea WHEN I'll use them, but nice to have them on hand at least. They were expensive as hell though, so these better last quite a while.
Should be getting the coconut flour tomorrow. At least I hope so.


AF is being a bit strange. It's usually heavy the first day, but not much making it to pad. I guess it's a medium flow right now. I'm sure it will pick up. Just hope it doesn't decide to stick around for longer than usual.

The salad really looks good. I've never tried stuffed peppers though I sorta like green peppers. I love stuffed mushrooms though. Longhorns has a delicious stuffed mushroom and I've tried to mimic theirs.

Mmmm Longhorn. DH and I absolutely love their chocolate cake (whatever it's actually called).
You get 2 HUGE slices of it along with some vanilla icecream. It's SO creamy and delicious.
We've already planned that it is the first cheat we're going to have after the 30 days lol.

Stuffed mushrooms sound really yummy. DH isn't a fan of mushrooms though but may try to make some for myself :D

I just thought I would add this- this is the how I tweaked my stuffed pepper recipe and they are fantastic. They are also a little healthier then the traditional recipe.

Stuffed Peppers
1 lb. Ground Turkey
4-5 Large Green Peppers
2-3 Yellow Squash or Zucchini or Mix, diced
1 can of Black beans, drained
1 can of corn or chickpeas
1 can of diced tomatoes
½ medium onion, diced
Eggplant diced (if you want to add more veg)
2 tsp. EVOO
1 c. cheddar cheese, shredded

Preheat oven to 375 degrees.
In a pot bring about 4 c. of water to a boil. Once boiling insert peppers into water and let boil for approx 10 mins or until softish. Pull out of water and set on paper towel to dry- salt at that time.
In a large pan heat EVOO and add onions. Cook for about 5 mins until soft and add ground turkey. Cook until brown. Add Squash, Black Beans, Corn/Chickpeas, Tomatoes, Eggplant(optional), and bring to a boil. Once boiling take down to low and let simmer for about 30 minutes.

In a large baking pan stuff peppers with mixture and lay out stuffed side up. Add the rest of the mixture to the pan around the peppers. Sprinkle cheese over all peppers and bake for approximately 30 minutes or until tops are slightly browned and peppers are soft.

Oh and I forgot to add when making your filling- add salt, pepper, and garlic to taste :)

FYI - coconut crystals can also be found at bulk food stores as 'palm sugar'. Still expensive, but maybe cheaper than ordering it in a fancy container!

Palm sugar. I wondered what that was. Thanks for the tip! I will def look out for it next time I need some :D
